Roast suckling pork, crackling, cannellini beans roasting juices & salsa verde - 3

J's comment > I love this dish, but it might not be for everyone; the 'crackling' actually has a cartilage texture, the way I like it.

Roasted elk: Horseradish crème fraiche - 2+

Roast bone marrow: Apple salad, bruschetta - 2

Duck liver toscana: Zucchini pickles, bruschetta, aged balsamic - 2

Leaves, parmesan, spiced almonds - 2

Focaccia bread & butter - 2

Vanilla panna cotta, roman brandy & amaretti - 2+

J's comment > very good, but the brandy was too strong; if there had been a way to mix it into the panna cotta, might have been better
