Hormone free Peace Country lamb slow roasted w mushrooms, roasted root vegetables, hand-cut pasta, red wine jus - 2

Pemberton Meadows beef tenderloin sauteed w mushrooms, broccoli rabe and truffle risotto and onion jam - 2

Seared Baja Ocean Wise scallops w sweet potato, figs & prosciutto - 2

J's comment > too salty, but scallop cooked OK

Crispy brussels sprouts w Sloping Hill farms heritage pork belly, scotched 64 degree egg - 2

Roasted Chestnut Bisque: Apple Lane farm apples, spiced brandy cream - 2

J's comment > didn't get much chestnut flavor

Fall salad w baby carrots, beets, tokyo turnips, fennel, pumpkin, tangerine dressing - 2

Butter poached Alaskan crab w Hui's farm mushrooms, leeks - 1

J's comment > crab was stone cold and flavorless.

Rougie's Quebec Farms foie gras terrine - 1

J's comment > foie gras way too salty, the crisp was crispy alright, but it just didn't work. I have never had a foie gras dish that I hated so much that I sent back. Really not sure what the kitchen was doing today.

A La Minute smoked Skuna Bay salmon w kale nori, wasabi cauliflower puree - 1

J's comment > Absolutely disgusted. The salmon didn't taste smoked in the slightest and the salmon itself was stringy. I sent this back, and the server gave me some bull about how the type of salmon itself has changed since our visit in July. She obviously had no idea that I record all my meals. The Skuna Bay salmon has been the ONLY type of salmon used since this item appeared on the menu. Note to self, don't bother ordering this, or actually, anything else if Chef Thomas isn't in the house.

Executive Chef Thomas was not in the house tonight, and this is the 3rd time we had the misfortune to dine without having him at the kitchen helm. 3 out of 3 times? I truly believe the quality suffers whenever Chef Thomas is absent.
