Chicken liver parfait - 2+

J's comment > very creamy parfait, practically like a whipped butter texture but slightly denser w chicken liver flavoring; yum!

Pork rilettes - 2+

J's comment > loved the creaminess of the rilettes that nonetheless retained its shredded texture; mustard on the side melded well w the creamy rilette

Duck breast, fermented kamut crêpe, quince, turnip - 2

J's comment > not bad; just the right amt of quince in the crepe, not too sweet, but crepe itself was on the hard side; duck was tad overdone, slightly chewy

Soft polenta, poached egg, nettles, pecorino, espelette - 2

J's comment > not bad, polenta creamy but pecorino cheese subdued (an inherently salty and stronger tasting cheese, very similar to parmesan); egg poached beautifully and blended into the polenta upon poking it apart

Gougeres w fontina - 2

J's comment > not bad, gougeres (that's the puff pastry) slightly overdone and ratio of gougeres to cheese in favor of the pastry (could have used more cheese filling, or strengthened the flavor of the cheese)

Octopus, salsa verde, chicherons - 2

J's comment > octopus very slightly chewy, but completely edible; couldn't help comparing this to Diva's though, which Diva takes hands down, and reminiscing on Bishop's octopus carpaccio

Duck pie - 2

J's comment > crust was OK, but the duck filling was completely hard and not very flavorful

Fig pannacotta - 2+

J's comment > excellent texture, in that it retains its firmness whilst being oh-so-soft to dig into; fig sweetness well balanced, not too sweet for this delicate dessert; well done

Frangipan tart - 2

J's comment > crust OK, not flaky, more like a pie crust; filling OK

Non alcoholic spritz: Pear, pineapple & ginger syrup, ginger ale - 2+

J's comment > very tasty; trace amts of ginger (just the way I like it); the stinging aftertaste from eating pineapples was thankfully absent; the pear, the most subtle item in the list of ingredients was a frontrunner in flavor; well done

Extra Comment
We had a seat in front of the kitchen which was cool, cause you get to see the action, but we found out after we left that the smell of the cooking somehow had gotten all over our clothes; you'd have to wash the clothes to get out the smells.
