Salted Caramel Apple Creme Brulee: Caramelized granny smith apples with a salted caramel custard. Finished with a touch of citrus salt - 2 J's comment > not bad; loved the pairing of the granny smith apples & the custard, the apples aren't just for decoration, it tastes really fab together; on its own though, the custard was a tad warm (I think the chef went a little too eager w the torch), surprisingly though, the top wasn't caramelized enough - I think the salt may have something to do w the chemistry w the flame; I got the salt, but wouldn't go so far to point out that it's 'citrus salt' J's comment > part of the Vancouver Creme Brulee Challenge as organized by the Vancouver Foodster (runs til Apr 30) www.vancouverfoodster.com/2014/04/11/vancouver-creme-brulee-challenge |
