Earls on Hornby (Test Kitchen)

North Pacific Sablefish w unagi maple glaze, soba noodles, spinach, snap peas, gai lan, shiitake mushrooms, dashi broth - 2

J's comment > sablefish wasn't bad, cooked perfectly, and paired wonderfully w the sauce (excellent unagi maple blend BTW), but the fish could have been seared just a touch more for a nice outer layer crisp; soba was sadly overcooked; snap peas still had the stringy sides attached; mushrooms were OK; dashi broth slightly weak

Grilled shishito peppers - 2

J's comment > blistered well; very soft texture w just a dash of salt but flavor overall a tad one dimensional

Chocolate Hazelnut Bar w salted caramel, crunchy mandarin, vanilla bean gelato - 2

J's comment > an eg of how everything can go technically right, yet still miss the mark; the freeze-dried crunchy mandarins were a unique touch, definitely crunchy as advertised; chocolate hazelnut bar was not too rich actually, and the hazelnut was another nice crunch aspect; I can see how the dessert chef tried to blend the crispy textures w the richer creamier flavors on the plate, and technically all were spot on, but nonetheless the dessert felt a bit... ordinary
