Fricassée: 2 fried eggs, braised short ribs, roasted potatoes, caramelized onions, applewood smoked cheddar w grilled focaccia - 2

J's comment > not bad; the good stuff - very tender, marbly and juicy short ribs (except for one or two pieces which were a tad dry); eggs cooked well, both sunny side up; loved the melty cheese at the bottom of the pan which miraculously didn't burn or harden (the skillet was still piping hot half way through eating); very flavorful jus

not so impressed - focaccia was hard and unwieldy to eat, I'm sure the chef intended to have the diners dip the bread in the jus in the skillet but 1) although the jus available was potent and a tad too strong on its own (definitely designed for dipping bread into), it wasn't enough to dip the bread in, so I just forewent; and 2) the bread was really that hard to cut into bite-sized pieces

Liege-style waffle - 2

J's comment > not bad; soft waffle w a good chewy texture; not too sweet; definitely designed for adding toppings on - would serve as a good base for offered toppings, which I sadly didn't get

Bergamot & Buttermilk cream soda: Madagascar vanilla, bergamot citrus, buttermilk & chocolate bitters - 2

J's comment > not bad; light cream soda w strong notes of the buttermilk, bergamot & vanilla (didn't get the citrus or chocolate parts though); really good balance of the cream and soda
