Bison tartar, egg yolk two ways, watercress puree, potato crumb, sweet onion loaf - 2

J's comment > not bad; not gamey nor chewy at all; very fresh; tartar was better on its own though; loaf was OK, soft enough, but detracted from the tartar

Roasted cauliflower salad, sprouted lentils, cashews, pea shoots, buttermilk dressing, lemon marmalade, chili threads - 2

J's comment > not bad; good grill flavor on the cauliflower, cooked to softness but not mushy; marmalade was a good pairing;  good variety of textures; not spicy

Lamb roulade, house made ricotta, olive brined spinach, gnocchi lamb jus - 2

J's comment > not bad; this was actually from the lamb belly section so it very tender because of the fat (but easy to cut off); gnocchi bites good, crisp all around w a mochi-like center; FYI, one diner at our table found this too gamey even though she likes lamb in general, myself and 5 others thought it was fine

Charcoal grilled pork belly, beet two ways, pickled mustard seeds, faro verde - 2

J's comment > not bad; good grill flavor on the pork but a touch charcoaled (ie burnt) on some parts; very tender but too salty; loved the texture of the faro (kinda like barley, which I like); beets were tender too, although the red puree was more for show (well, I couldn't taste it under all the salt on the pork)

Buttermilk fried chicken, horseradish maple aioli, salt & vinegar chicken skins - 2

J's comment > not bad; chicken fried well, crisp and tender, but could be even juicier; chicken skins very crisp, like chips

Oysters, shaved foie gras, compressed apple, jalapeno mignonette - 2

J's comment > not bad; very fresh oysters; loved the adventurous spree w the foie and apple which actually complemented the oyster quite well; sadly, there was a really fishy aftertaste :(

Seared trout, roasted carrot, pickled cabbage puree, charred onion, dill butter sauce - 2

J's comment > trout cooked well, so were the other ingredients on the plate; decent, but avg flavors

Southern fried sweet breads, toasted bread emulsion, onion jam - 2

J's comment > good fry on the sweet breads but as H. said, portion of sweetbread too small, so all you taste is the deep fried batter; didn't get the sweetbreads' flavor at all actually

Mussels off the shell, braised garlic, white wine fennel broth, torn bread, thyme oil - 2

J's comment > fresh mussels, and quite a generous amt, but it just failed to impress; bread hit all the right marks: soft, crisp on the edges, didn't melt into the broth, and yet it wasn't quite 'there'; broth OK, your avg white wine broth

Chocolate creme brulee, honeycomb, salted caramel ice cream, lemon and bitter chocolate powder - 2

J's comment > not bad; very creamy chocolate creme brulee; good combo w the salted caramel; loved the crisp and sweet-but-not-too-sweet honeycomb (I'm a sucker for that sweet); didn't taste the powder at all though you can see it

Warm rhubarb compote, mixed nut crumble, black pepper thyme ice cream - 2

J's comment > essentially a deconstructed rhubarb pie; rhubarb not too tart; very good crumble texture; ice cream was definitely not 'black pepper thyme', none of us (6 in all) got either 'black pepper' or 'thyme')
