Taishoken Ramen / 大勝軒

March 2, 2015

Tsukemen ramen, Original: Soup and noodle served separately w pork belly chashu - 2

J's comment > not bad; very eggy noodles w just the right amt of bounce and thickness; extremely rich broth, just the way I like it but a bit too salty this time around;

funny thing, I asked for hot noodles, and the noodles arrived steaming but once dunked in the semi-hot broth, still turned out room temp (?!); the chef actually came out to plonk a hot stone (see that in the bowl?) to keep the broth hot, but to no avail;

pork belly chashu had a good marbling on it; I asked for one piece chicken chashu just to compare and although the chicken wasn't dry (quite tender actually), I still prefer the pork
