Crispy pork bits: Hocks & jowls, grainy mustard mayo, pickles - 3

J's comment > perfectly crisped all around w juicy tender pork in the center; excellent pairing w the mustard mayo; hats off to Chef Chung, consider me impressed

Beets roasted in brown butter w yogurt mint, sheeps cheese - 2+

J's comment > tender beets w clean and clear tasting mint; good meld of the yogurt and cheese; a salad I would gladly order over and over again

Sorta traditional beef tartare w poached egg, hickory stick, arugula - 2+

J's comment > fresh beef tartare, not gamey in the least; perfectly poached egg, still very runny in the center but w soft cooked egg whites; loved the addition of the hickory sticks, but a tad too much; nonetheless, another dish I will order again (maybe get the sticks on the side to add to taste?)

Salmon on toast: Smoked belly, avocado, onion dill bread - 2+

J's comment > salmon not fishy and not dry at all; decent bread; loved the avocado but wished there was more

Roasted pork belly: Jerk spiced, rice & beans, green sauce - 2+

J's comment > great cut of pork belly, marbly, not too lean and not too fat, the ideal pork belly, cooked well; didn't get much of the jerk; complements OK, but didn't quite 'seal the deal'; turnips cooked well but a touch al dente for my liking; nonetheless, the beauty of the pork belly was sufficient to bring home the bacon on its own (haha)

Meatballs & cheesy toast w basil pesto, pecorina cheese - 2+

J's comment > fresh and tasty tomato sauce; flavorful meatballs despite being a bit firm and a bit dry; toast could be firmer, but in this case was just a bit chewy; would have liked the cheese to be a bit meltier instead of hardened; still, one of the better meatballs I've had in YVR

House made bread w butter: Warm & toasty salted butter - 2

J's comment > not bad; decent bread, slightly firm but not too hard; butter was the unsalted kind w salt sprinkled on top (not a fan of this option)

Buttermilk panna cotta w grapes, almond biscotti - 2+

J's comment > great panna cotta texture, not too gelatinous as most other places serve it and not too heavy; went really well w the biscotti; good use of the fruitiness in the grapes and jam to cut through the cream

Chocolate fig cake w blood orange, vanilla ice cream - 2

J's comment > cake passable but a bit too firm and chewy; figs definitely present but didn't work as well as it sounds on paper; same goes for the blood orange pieces and ice cream which were sweet and decent on their own, but just didn't wrap up this dessert

Espresso martini - 2

J's comment > not bad; easy to drink; strong chocolate and coffee notes; a touch sweet

Camron's Kick: Irish whiskey, blended scotch, almond liquere, angostura - 2

J's comment > not bad; easy to drink

Luck ain't got nothing to do w the skills of Chef Chung - an almost perfect meal!
